Clermont old town is gorgeous and did the 5K runs along the lake on Saturdays. It has a very laid back beautiful feel to it.
Celebration town with the colonial style houses is a must. Hiring bikes is very cheap and easy and you can stop at the cafes and restaurants enroute. There is no problem with taking your time and enjoying the day.

Florida is awesome. But paying cash for tolls is increasingly difficult so you need to budget for a toll pass. We visited miami and the keys but even locally there are lots of toll sections and if you don't pay its a 25 dollar fine each time.
